This is what I use for one ten to twelve inch pizza.
1 package yeast
3/4 cup warm water
1 tbs. sugar
1tsp.salt
1 1/2 cup bread flour
1tbs. olive oil
Mix the yeast and sugar in the water, and let stand untill foamy, about 10 minutes. Add the salt and olive oil, and then flour and mix until it gathers together. Knead, I use a mixer, for about five minutes, until it forms a firm smooth dough. You may have to use a bit more, or less flour, depending on humidity, temperature, etc. Put in a lightly oiled bowl, cover with plastic wrap, and let it rise in a fairly warm spot till doubled. Punch down, and let it rise one more time. To me, the most important thing is fairly slow rises. This helps to develope the full flavor of the yeast and flour. Roll out fairly thin, top with sauce, and whatever toppings you like, and bake in a pre heated 450 degree oven till the top is bubbly, and the crust browned. I use a pizza stone, but you can use a round pizza pan.
