Need a some good Eggolant recipes
, I planted a white eggplant plant and it seems it going to produce many eggplants. And was hoping to get some new recipes other then the traditional Eggplant Parm. I know there are some awesome cooks out there. Thanks

Oh yummy I love the white eggplants and the light purple ones better than the usual ones...although I love those too

I've made this several times and everyone really loves it. I place one layer of pasta lasagna noodles (uncooked) on the very bottom, but not necessary. If you don't like lamb, use turkey or soy-patties. The recipe is somewhat long and it will take some time but the end result is wonderful!

I usually cut back on the salt because...well just because.... and the layer of uncooked pasta helps absorb the excess liquid so the dish comes out firm... let it cool for 10 to 15 min before cutting into it. And I peel my eggplant just because I don't like the texture of the skin.

I almost never cook with salt, hubby has high blood pressure.

How about a Ratatouille? It's a dish from the south of France, the Provence.
It's made with eggplant, zucchini, tomato, bell peppers, onion, garlic, and of course, some olive oil.
Basically you cut up the veggies, dump it all into a pan and cook it. Very healthy and very tasty dish, especially with some wine!
Tell me if you want the recipe, I'll translate and type it up.

WoW!! Congrats on the growing!!! a simple really easy way apart from Parmigiana is ...just fry them !
Slice- put salt to drain excess water, rinse, dry in paper towel, flour & fry in olive oil ! YUMMY !!!!
They need to be eaten immediately or else become soft!

ps: the skin contains all the 'good stuff'! you can slice them thin and leave it on!
