B'bcued Salmon w/ Blueberry Salsa
This recipe can be found in various forms on the internet. We like this variation the best and the honey is a touch of our own. Living in the Pacific Northwest we have an abundance both of salmon and blueberries.
Blueberry salsa:
-1/2 large pink grapefruit (sectioned with membrane removed), diced
-2 TBS finely chopped red onion
-1 jalapeno pepper, chopped
-1 tsp honey
-1 TBS lime juice
-1 cup blueberries, fresh or thawed
-2 TBS chopped fresh cilantro
-salt and freshly ground pepper to taste
-mix items and refrigerate until ready to use, but make as close to serving time as possible
Barbecued Salmon
-1 salmon fillet (we use sockeye, but any good salmon will do)
-baste salmon with honey
-barbeque salmon skin side down approx. 10 minutes for each inch of thickness
Spoon salsa over salmon or serve as a side.
