I thought that I would share with you a super delicious recipe for chocolate mousse that we have every year for x-mas, Easter and various B-days. It's from George Blanc, a famous french chef. I translated it the best I could! I will convert the grams to cups tomorrow, when I have more time.
Ingredients (for 8 people):
6 eggs
250g dark chocolate (50% cacao minimum)
9 ounces
100g butter
3.5 ounces, or about 1/2 cup
40g sugar
1.4 ounces, is less than 1/4 cup 1/4cup=50g
1 pinch of salt
*Break the chocolate into squares and melt it in a pan 'bain marie' medium/low heat. (bain-marie: put the pan with chocolate in another pan with water. This way the chocolate is heated indirectly to avoid burning. Don't let the water boil)
*Cut the butter into pieces and gradually stir them into the melted chocolate. Stir until you have a nice smooth, shiny chocolate sauce.
*Take off the stove and add the egg yolks(just the yellow part) and stir.
*In a bowl, beat the egg whites with a pinch of salt, slowly increasing the speed. Gradually add the sugar while beating. Stop when they are nice and fluffy.
*Pour chocolate sauce over the beat egg whites. Slowly mix it together to not lose to much of the fluffiness.
*Keep in bowl or pour in nicer bowl, then refrigerate several hours before serving.

This mousse is sinfully good. Luckily it's very filling, so you'll go for seconds, but not thirds!!
