Bacon Wrapped Scallop and Salmon Skewers
4-6 servings
8 slices of bacon, cut into 3” lengths
1 lb. skinned salmon fillets
1 lb. sea or bay scallops
¼ c. olive oil
2 tbl. Lemon juice
2 tbl. Fresh chopped sage or thyme
½ tsp. salt
¼ tsp. fresh ground pepper
Remove any bones from the salmon and cut into 1” cubes.
Place salmon and scallops in a bowl and add the olive oil, lemon juice, herbs, salt, and pepper. Let marinate 30 minutes. Prepare a fire in grill. Remove fish from marinade and set aside. Alternately wrap the salmon and scallops in the bacon slices and skewer on wooden or metal skewers. Grill, basting with the reserved marinade until fish is just opaque and bacon is crisp. Serve with lemon wedges.
