I don't think yogurt is low carb vs milk. Iirc, the milk sugars are altered by the bacteria but not much (converted into lactic acid or similar) and the human body/liver uses that in the same pathways as sugars/carbs.

I do not like store bought sauerkraut, but love home made.

Generally, plain full fat yogurt is considered a keto food.

As for lactate/lactic acid, it technically is no CH, though its formula is ...
But anyway, the amount in full fat yogurt is not as much, to interfere with keto diet. Lactate/lactic acid is always present in our body.

The benefits of fermented foods - lactate fermentation - are many. Not only of carboxylic acids but also of simple acids, like (apple, wine) vinegar, plain vinegar (there is still a dispute going there if the positiv effect of 'apple cider vinegar' does come from plain vinegar or from the 'mother of vinegar' or from both ...)

To stay keto, you limit your CH intake to 30 to 50 g CH; so it always depends on how much you consume from a low carb food ...
