Not your father's tots
Breakfast casserole
1 lb breakfast sausage (Jimmy Dean or equivalent)
9 eggs
1 can cream of mushroom soup
1 cup milk
1 2lb bag Tater Tots
2 cups shredded cheddar cheese
Cook the sausage in a skillet, chopping into small chunks as it cooks. Drain well.
Mix in a bowl the beaten eggs, milk, soup
In a 9x12 in baking pan (pyrex is best) put first the tater tots. Spread the sausage evenly on the tots.
Pour the wet ingredients over the dry.
Top with the cheese.
Cover the baking pan with foil and refrigerate overnight.
Bake in 350 degree (F) oven for 1 hour.
Enjoy!

That's an interesting way to raise your cholesterol. Which at our age we should sorry about...hmmm?
That said, I've made this for hospitality and it disappears quickly.

It definitely isn't for everyday enjoyment. We have it on occasion. It has been a good hospitality dish for us as well. And cholesterol? That's what the statins are for!!

They are minced up potatoes, or french fries, pressed into a semi sphere. (The shape is like a golf ball sized gumdrop.) You cook them in the oven like french fries. They are delicious but we very seldom have them. Apparently it's an American thing?
