That would work just fine. The potatoes are broken down by the overnight soak in the refrigerator.

We have a similar dish here, commonly called "funeral potatoes." A mix of hashbrowns (regular or Southern style), a chopped onion, cup of sour cream, can of cream of chicken soup, and a bunch of shredded cheese. Mix together, put some of cheese in mix, and cover with cheese. 350F for around 45 minutes or so.
Called "funeral potatoes" because they always seem to appear at dinners after a funeral. Same with the little Hawaiin rolls you put ham and cheese in, butter and seasons brushed on top, and baked in oven. "Funeral sandwiches."
Personally hope there's something more fun at my funeral... sushi, Pad Thai, ribs, Caesar salad, corn dogs... ya know, the good stuff.

Or you can use frozen potatoes O'Brian, which is how I make my breakfast casserole.

Don't forget the funeral cake with the pineapple in it. Don't die soon, or there'll be only a virtual funeral (and I'd have to write another sad poem.)

The "good" funerals round here have steak pie. There's a saying that if there's a person who isn't really known to the deceased turns up to the funeral, then they're only there for the steak pie.

By the way, eating cholesterol doesn't cause high blood cholesterol. The liver makes whatever cholesterol it thinks the body needs. We have only a minimal understanding of lipid metabolism and nutrition, despite what some people with medicine to sell would have you think. Almost everybody's cholesterol drops when they drastically reduce refined cadbohydrate intake.

When I was a child Bubble and Squeak was a 'thing', usually on Mondays.
This was Sundays leftover mash and veggies mixed up with an egg then fried till crispy. Could be a large 'cake' which was then sliced or individual serves like hash browns
Ive noticed just recently that Aldi are selling frozen ones and I think McCains do a version too. Both are good.

I've made a dish with a similar name from shredded cabbage andmashed potatoes baked as a casserole.

I make Bubble and Squeak EVERY week! But I dry fry all the veggies until crispy (there's a bit of oil from the cut up roast potatoes and parsnips) and then fry my eggs separately and place on top. (Sometimes it's quail's eggs ) I made it today actually, pots, parsnips, sweet pots, carrots, green beans, zucchini, broccoli, cauliflower. My other half pours gravy over his, over the fried eggs!!
I really don't like any of the hash browns I've tried at places like McDonalds, I guess the 'tots' are much nicer than them!
I'm going to give the OP's recipe a try next week with my mash variation - I'll let you know how it goes.

Don't forget plain ol' genetics ES.... I should deserve high cholesterol, period. Or high blood pressure. Won't happen. We tend to just roll with either mental illness or dementia in my family. Pick yer poison. Oh, and pretty sure I've confused my liver enough over the years it's just lying down and patiently waiting until I give it the high sign.

Never heard of pineapple funeral cake. Do tell. Not planning on a funeral anytime soon. And awaiting a joyous poem instead of another sad one. There's already enough sad in life. Let's just live large!
PS I make a mean banana split pie. Thinking about doing one for Christmas.
