dumb question but, if they are potted, how do you know when the roots are long enough? Do they grow above the surface?

You know there's roots when the bulb kinda 'sticks' in the media. You can also see that they are growing in the media. Its just a guesstimate.
I put in the fridge when they go dormant and lose all their leaves. And remove when the beginning of growth happens in the spring.

It can, or you can take it out to help induce growth. The growth nub will elongate, then it's ready to come out.
