Due to the lack of information I've found about this species on the internet, I wanted to share here that I received an email from an orchid grower that I found through another orchid forum on the internet, who raised this orchid for two years before parting with his. However, he did have some care tips for me and I cannot thank him enough. I won't share his entire email, but the nuts and bolts of it are thus:
Coelogyne Usitana comes from Mindanao island in the Philippines. Many phalaenopsis orchids commonly kept in this hobby also come from the Philippines. Coelogyne Usitana's care is almost exactly that of a phalaenopsis because it comes from the same environment. Similar light needs, similar conditions should be provided, similar fertilizer needs. It does not receive a winter rest, like other coelogyne, because the zone it comes from does not have a dry season. It's not picky about water quality, it's actually sort of a "grow and go" orchid.
Now that I know this... I have to wonder why it is that every orchid grower on the planet doesn't have one.
We'll see how things work out for me with this orchid. I'm already seeing new root growth, which I am very pleased about. I had to move mine from a mount, to a pot and I was worried that potting it would set it back, but that doesn't seem to have been the case. It's a very small mount of growth, but it's growth, so I'll take it!
