Do they just start up on their own? Or do they respond once you start the watering? If the latter, when do you start first watering?

Yes, they just begin growing on their own once their dormancy needs have been met. You start watering when they break dormancy, which seems to be around March here. I suspect they have some sort of internal clock and break dormancy on their own timing cues.

Where do you keep yours for the winter?

I overwinter mine in the fridge, it's the easiest way to control the cool temperatures they require. Depending on your zone, some species may be happy overwintering outside.
