I recently acquired a rather sickly little Encyclia mariae. It suffered even more when my cat chewed off its 2 remaining leaves. Since then, it had started one tiny new pseudobulb. I also noticed that one of the older pseudobulbs had sprouted a rapidly growing green growth midway up. What is it??

The picture is too blurry to be sure, but if there is a node at that point on the pseudobulb (might just look like a faint line around it) then it isn't impossible for it to be a new growth. Probably more likely than a root from that position. Every node has meristem tissue that can potentially grow, and especially if a plant is in distress it might try anything to survive.
