Well, actually for this particular type of dendrobiums, losing leaves are not normal unless they are a few years old.
These are everygreen and keep their leaves on old canes for a few years before they naturally drop the leaves.

Some common reasons for sudden and premature leaf loss on these plants are exposure to cold, overwatering, severe underwatering, certain diseases (not common on these plants though).

So the ones with no leaves (is that the one on the front right in the picture? I can't tell very well), you might want to check the roots to see if they are all good or not.
Even when leaves are prematurely dropped, the plants are often very much alive and sprout new shoots when the conditions are good again, which is usually in the spring in NY.

Most of mine spike and bloom in late summer into fall, and some of them bloom more than once a year.

I love dendrobiums.

I bought these 3 dendrobiums in May. All three were blooming. The one, which has no leaves left, seemed to be overwatered. They bloomed till June. Then 2 plants started blooming again and got new growth too and the third one lost all leaves and has no new growth. I didn't take it out of the pot yet to check all roots, but on the top they look healthy to me. All three plants were together in the same big decorative pot in a very sunny spot.

Here are some pictures. I just watered them, it's been a week and they needed water.
