Orchid looks very healthy; just remove a bit of the media. I usualy suggest an inch between the medium and the rim of the pot.

Thank you. Is it okay if the roots are a little exposed then?

That's fine. As long as you have potted it covering the rhizome and older roots and its secure in the pot. Hope you cut away any dead roots!
Don't want dead roots taking up most of the space in the pot.

Yes, trimmed them all off. I also removed as much of the sarongs as I could.
