Steve, I have this L. angereri in tree fern fiber mixed with small pieces of rock. It is in very bright light.
I have several of my Cattleyas and Laelias in moss and clay pots. In these cases, I actually make a mix of 70% moss and 30% Styrofoam peanuts. This is necessary to the moss do not compact excessively and also to facilitate drainage. Using this mix I got better control of the humidity in the pots. I generally let the pots almost get dry. I don't like the moss to dry out completely because it becomes crispy and somewhat hydro-repellent. So, water frequency depends a little on how the weather is. But, as a general guide, two-three times a week during the winter and every other day during the summer.
