It is not unusual for a unifoliate Cattleya to occasionally grow a new growth with 2 leaves. I believe it is due to the presence of a bifoliate Cattleya in it's ancestry.

I am glad I asked becouse I had read before somewhere that it was do to stress on the plant, which to me seemed weird becouse nothing has changed but yet the last 3 or 4 new growths have all had 2 leaves, on both of my catts.
