I question whether it needs it at all, but Louis_W makes a good point: "winter rest" is more about withholding nitrogen than water.
If you look at the plants that seem to require such rest periods, catasetinae seem to be somewhat unique in their need for "dry". I am not aware of anyone growing them in S/H culture (there might be some), but folks growing other stuff that way often achieve the "rest" phase through no feeding and lower temperatures without stopping watering.
