Regarding the plant care, I re-watched the video on the growing cycle. It seems like my plant is a bit out-of-phase... May be a recent established import. It's growth is not quite mature, but I know, for this time of year I should be tapering water and cutting fertilizer... I feel like my options are to limit this year's growth or risk injury to the plant. Because I'm growing indoors, and have control of light, humidity, and temps I'm thinking I might be fine to begin tapering fertilizer now instead of cutting completely and maybe hit some sort of middle ground. Thoughts?

I think it would probably be better to try to meet the plant where it is, and gently urge it into a new growth cycle. I would give it normal growing season conditions until the growth stops. It's possible it will stall and not finish growing out completely. After it stops, it will push out new roots and get established in whatever it's growing in. That would be the moment to start a drier period, and wait for the plant to put out new growth, whether it's one month or 4 months.

Now is the prime grow season for all 3 of mine. 2 came straight from Peru a couple of years ago, and 1 came from Orchid Trails probably before the other 2. They were pretty rootless, but are growing great now without any extra care. I have a ton of light for all my catts, though (600w leds)

Have they bloomed before? Also, are you giving them diurnal variation throughout the year?

2 from Peru look like divisions with no prior sheaths. It was touch and go for a year until they developed roots and grew 2 new fatter pbs each, with significantly wider and taller leaves. Newest, third, growth is about to open, so we shall see about blooming soon. No major variations, maybe 5 degrees.
The one from Orchid trail was a seed grown plant per John, and it is lagging behind the 2 from Peru. It was decent size upon arrival, maybe 4-5 years old? This one is in the basement, where there are more pronounced temp swings. It is just waking up now.

Thanks, as a heads up, now that I've had this guy for a few weeks, it looks like it's (maybe?) stopped or slowed down maturing the bulb. I was prepared to keep feeding it an letting it grow out, but maybe that's not meant to be... As you can see, it's pretty small compared to the previous bulbs, borderline tiny actually. My guess is that it's a delayed reaction, possibly pouting a bit due to cooler temps during shipping. In my experience with my other cattleyas grown in the same spot, once the outer bulb sheath dies back, it's mostly done.
All of the roots are still growing, both aerial and what I can see in the pot, so at least there's that.

I feel like any change in conditions, and these guys slam on the brakes. Now that you've got it in a consistent environment, I would expect the new growth to paper all its sheaths, and start pushing new roots out. Might be up to a couple months from now, but still I would expect it by then.
My 'Killa' clone stopped its latest growth early after I repotted it. Luckily it was mostly done, the leaf is just a little more folded down towards the bulb. I'm expecting roots soon, which is why I repotted it a couple weekends ago.

Within a week of you posting this, I noticed the root nubs starting to push; it's like it heard your comment... So, on the growth timeline from your video, it thinks it's the end of August or there abouts.
The bulb is still swelling up a bit as it broke the papers on the new growth or as I like to think of it, it "hulked out", lol. Would be nice if it fattenned up a bit more as it's still a bit small for my liking, but I suspect it got set back at time of import, well before I got it, so the next growth should be a lot bigger and maybe even bloom (one can hope).
