Photographing certain colors (coerulea lavender, and many of the reds especially) to capture what your eyes see can make you crazy. Add the differences in what you see based on light can make you crazier. And just to confound that some more, camera/phone sensors have A/I to "correct" colors... they tend to be optimized for (Caucasian) skin tones... and background can influence them. Take a look at

I try to get my pix as close as possible (mess with camera white balance, and lighting) then fall back on photo editing software (Photoshop, or the excellent, free (for personal use)
Irfanview ) to adjust to get closer to what I see. Texture (velvety, crystalline, glossy, etc) is another challenge. Sometimes you just have to be there...
