You can, and should, repot now.... carefully (because new roots are starting to grow and you don't want to damage those tender green tips) Don't remove old media that doesn't come off easily, just add the sphag. It will have to be moist to work with it of course, that's OK. Just no more water until the new roots are 3-4" at least. Since sometimes, if the new roots are digging into the media you can't see what's happening, another clue is a second flush of roots that will start after the first are established. Once that second batch dig into the media, and the leaves are well-extended, you can start watering. But along with the roots, you went to be sure that the leaves are well spread-out so that there is no "pocket" for water to accumulate and potentially cause rot. Fred Clarke says that there is no harm in waiting past the time when you could start watering, but there is potential for harm in starting too soon.
