Typically, the plant will tell you when its growth cycle starts and ends (as Manfred alluded to), so you'll want to stop watering when the leaves start dropping. Watering the plant may have caused it to start growing the new bulb, but maybe not. Its tough to say. You might just get a spike in a few weeks or you might get two spikes after the new growth matures.

Next year, stop watering well before the last leaf turns brown and let it rest. This is just to be safe so that your plant doesn't rot. If you can keep your winter temps warm (above 55 degrees), they don't mind growing through the "dormant" season and will not rot.
