I grow one Catasetum plant : a big C. maculatum with lots of roots.
And there are at this time 2 strong flower spikes, one more advanced than the other.
My questions are :
(a) could male and female flowers develop on the same plant during the same flowering ?
(b) if (a) does not apply, what factors (e.g. ambiant factors) determine the development of
male or female flowers, respectively ?

Yes it can happen regardless of Light, Fertilizer application and drying.
This happen regardless species or hybrids, this has been my personal experience.

Male and female flowers can occur on the same spike! Large plants tends to throw female flowers and smaller plants tend to throw male flowers. Increased light on smaller plants will often aid in getting female flowers, though plant size tends to be a greater influence on the gender of the flower than light.
