Dormancy and when to stop watering

The culture sheets from AOS or SVO (can't remember which) did mention leaving the plants bare root for dormancy with occasional misting if severe shriveling occurred.

I also don't cut the roots off in winter, but I've also seen growers who do with great success. My Catasetinae will not get any water through the winter, however.
