Both plants look healthy! The Cycnoches x Mormodes should be wrapped with a bit of sphagnum moss to get it growing bigger. I would wait until the keiki finish growing and when a new bulbs forms on the keiki with new roots I would remove the mature bulb with the new growth off the mother plant.

They Cycnoche Wine Delight should be watered now since there are roots.

I have a Cycnoches cooperii from Fred Clarke that I water year round and let the medium dry out completely before watering otherwise the pseduobulbs will be dehydrated. The reason I water year round is because I grow indoor and the temperatures are warm and bright under my 400 HID lights. It is very dry!

I can't remember why this happens, but if I recall correctly, Ramon has a theory. It happens fairly regularly though. Usually, the pbulb is growing straight up and down and the strangely placed keiki just winds it roots down the pbulb into the media. Since yours is bent over, its a bit more tricky to get the roots into the right spot.
