Any Catasetum plant can produce males, females, or both in the same season. So it's luck of the draw. Give them not enough of what they want, you may well get nothing. Maybe be a little too nice, and end up with females. You just need to have lots of plants, so that you raise your odds of getting what you want.
And maybe toss into the mix some of the Catasetinae that aren't dimorphic (like Clowesia and Mormodes) or less extremely dimorphic like Cycnoches. (Combinations of these with Catasetums tend to be consistent...)
