Whoops, I didn’t see this post before. You can give them a drink before the new roots emerge in the new growth. I’d leave it at this point.

I am still just trying to wrap my (wet, tropical, “plants need a lot of water”) mind around the notion of a dry period or a “winter” rest

The second set of quotations is because I have yet to see real evidence that there is such a thing as winter.....
