I have moved on from Dani, but I feel she knows enough about indoor house orchids. You do have to consider her setup. It is nearly professional. She used to grow them on a porch, then she moved and grows them in a special grow room. -- I think anyone who is serious about a subject can become something of an expert within a few years. She does not "pretend" to be 100% successful-- so she does not hide her mistakes. -- as always remember that they way she attends to her plants may not be useful to you if you are in a greatly different climate. -- Case in point-- Encyclia Radiata: The common culture advice for medium is:
Prosthechea radiata are usually grown in pots or baskets filled with a very thick, loose, quickly drying base, allowing the roots to dry quickly after watering. It is recommended that smaller pots are sufficient for 1-2 years growth, because the substrate in larger pots is too wet for too long after watering and does not allow for quick root drying.
In my area it does not get to 75% humidity and I can grow it with its roots in water all the time.
Is the person who wrote that "lying?" Nope, but the culture is not specific to my area. If I were to allow it to dry out it would die in a few months after becoming a shrivled-up cane.
So listen to a lot of different advice people-- but most of all try to find advice people who live in your area or region and who have demonstratable understanding of orchid culture.
