My NOID Dendrobium is flowering profusely right now for the first time since it was gifted to me (I believe it had flowers at that time). Flower spikes came only from canes with no leaves, many of which I thought were old and useless, but hadn't removed just yet since they were still a bit green. Just wondering if this is normal for this variety of orchid.

Wow, that’s a gorgeous bloom! And yes that is completely normal for this type of dendrobium. Look up nobile type dendrobiums
By the way- Unless a cane or pseudobulb on any orchid is rotting, or completely dry and hollow, I would leave them on the plant. They may not look like they are doing much but they are like storage tanks for energy.
Canes should not be removed because they are a food supply for the dendrobium. This is the same for any other pseudobulb producing orchid. Unless they are totally "dead wood" or rotten, then they should be left on. The canes are a type of storage "pseudobulb" and are useful to the plant. Canes can "live" for many years beyond the time they bloomed and had flowers. Canes that are old (leafless) can bloom again in some species. I have 2 types of dendrobiums (right now) with spikes from both the leafless cane and the cane with leaves. Nobile, and Dend-phal. Yours looks to me like a Nobile, but I do not have experience with "all dendrobiums."
