And now the zeer pots were made, the plants are repotted, and I even made a large pot for cooling a couple ales but how often do I wet the outside sand?

Those look great! keep them moist and they should do a good job keeping the roots cool. You can wet the sand as often as needed to keep it moist. It does not need to be soaking wet, just damp.
