There's nothing wrong with your desire for the fog for esthetic value and humidification, and the preference for the control that misting by hand gives you. Do what works for you. Some less creative types might go for the efficiency of a mist system and forgo the fog. You don't have to.
One option for the piped in fog look and humidification - Zoo Med Repti Fogger. Frogs or other amphibians are far more delicate than orchids. Anything meant for them will be fine for orchids.

I have tried those metal type submersible foggers in the past and found they leek metals into the water and change the Ph. I'm sticking with the Zoo Med Repti Fogger as my choice because the body of the fogger is plastic and the ultrasonic disc is high quality metal, all so it uses a fan and pipe!
