Why do some growths have two leaves, others only one leaf?

I'm wondering why on plants where I've noticed this such as Laelias and Cattleyas, there will be growths that only grow one leaf whereas other growths produce two leaves on the same plant?

The cross was bifoliate X unifoliate, and some times it is a very random expression of these genetics. This also happens in natural hybrids in Brazil or other places, where they are pollinated between populations of bifoliate, and unifoliate.
