I'm an orchid hobbiest beginner of 40 years and am considering going to the WOC in Ecuador next year. Will it be too far over my head to be fun? The pre and post tours look pretty cool.

And take one or more pre- or post- tours! Ecuador is a phenomenal hot spot, with a huge range of habitats in a small area. You will probably learn more in a week of seeing those orchids growing wild in Ecuador and feeling their environment than in 5 years of trial and error and reading. DO IT if you possibly can.

I agree you should go. I've gone on a number of habitat field trips and it's made an enormous difference in my ability to grow plants.

I can't help with deciding which tours to take. I do have personal experience with Ecuagenera and Orchid Conservation Alliance, and would recommend both of them highly. A deciding factor could be the amount of physical demands each offers/requires. Something to check out and think about.
