Prosthechea cochleata may not typically re-flower from the same spike at a later time, but I have definitely seen it do so. As long as a spike stays green it may surprise you the next year - a branch from near the base or new growth from the tip. Keikis are possible also. And I would assume that some of the similar cockle-shell Prosthecheas might do it too.
I haven't seen it on a true Encyclia, but after 40 years of growing orchids I find it harder and harder to say never. If an old spike stays green why not let it go and see what it will do?
