Cut the spike and enjoy it in a vase with fresh water, it could last two weeks or more.

The plant will grow new roots but it will suffer some leaf drop first. I would spray the whole plant with water multiple times each day, and keeping it in a place with bright indirect light and 80% humidity or more (inside a plastic bag or large container).
