Not all of them.
Den hercoglossum, vic-reg, ceraula, Mingle's Sapphire, mohlianum. bracteosum, tanii...just a few that I grow/have grown and while they are deciduous and yes, they drop their leaves...they don't require a cooler period nor do they require a "dry rest". A little drier during winter is ok...even good if light levels are low...but certainly not dry for long periods w/any of those.
Dendrobium is a vast group of orchids and the culture requirements is nearly as varied as the plants in the group. Best to try and avoid over-generalizing culture...especially in the Den group.
I agree w/the sentiment to leave the older canes. Many will bloom time and time again on those old canes.
