For you, Bud's advice is the best.
I grow mine outside in Northern California (zone 9) all year long with my Cymbidiums, rain, low temps and all, but this is not your option. I do put a saucer under many of them in the summer, especially the very large pots to be assured they get the water they need in the root bound pots.
Rasharki - definitely a keiki which is actually a new growth but will eventually bloom. If you wish to, when it has roots, gently twist it off and plant it in its own pot for the beginning of a new division of your older plant. I often put three of these from the same plant together to get a new larger division faster.
