Either media works well as long as you understand how to water efficiently in either one. Moss will stay wet longer than bark and so must be allowed time to dry out. Bark is open enough to allow watering nearly every day unless the age or condition of the bark is such that it is an oozy mess. I have found that the best way to judge when to water your orchid is by the weight of the pot. Pulling a skewer out of a slightly or very damp pot full of media doesn't really give you much information. To most folks lips it will feel the same. If you practice feeling the weight of the pot right after watering, and then a few days later you will see that there is a wider difference than a damp skewer against your lip. And...if your media and watering schedule are correct for your environment then having issues with watering shouldn't be an issue. Folks get a phal, repot it, and then the bottom leaves start to wilt or wrinkle and they immediately assume the plant is not going to live. If you look at things like the quality of your water, the light levels in which the plant resides, air movement, frequency of watering, RH (although I don't think that is such a big issue), handling of the plant, how were the roots handled during repotting, and simple things like how big is the pot vs the plant? Lots of things to think about.
