New to orchid board

Hi everyone. I am a former lurker and decided to join because I searched the boards and didn't find an answer to my question.

I purchased a big leaves white phalaenopsis at Whole Foods for $5.00. It was a big size, thinking I can learn to grow orchids. (I had previously lost two because I didn't know that it took forever to "reflower" and threw it out.) The blooms has fallen off. Two new leaves has grown and are the same size as the older leaves. I see 3 new roots coming from the stem of the plant. After watching some videos on YouTube and reading some post, I examined the roots that were in the pot, I discovered these weird looking growths that doesn't look like a mitten shape coming out of the roots. What could it be? My inexperienced eye thinks it is a root within a root.

I am waiting for flowers! I live in 9b and we don't really see a lot of cold temperatures. Should I trick it into flowering by offering it 3 ice cubes?
