So, should I be letting the interior medium get completely parched for a few days before rewatering? I was afraid because the leaves were twisting somewhat, the medium was getting too dry between waterings. I think I am killing them with kindness.

I don't let my phals go bone dry, although they are perfectly fine with a few days of being bone dry (guess the thick leaves help), especially while they are not growing, but constant moisture really helps.

When the potting mix is new (or/and when there are not crazy amount of root in the center), you don't need to worry about the center being too wet because that doesn't happen.

Water good, but remember new bark does not get wet easily at all, so even when you water the pot really good, the roots can only take up so much.
That is why I soak the pot every now and then.
Then once I "think" the mix is getting older, I stop soaking or not as often.

Regarding twisting leaves, I think it could be genetic.
Dehydrated phal leaves are usually wrinkly and tender to touch.
As long as the leaves are firm and plump, it is not suffering from dehydration.
