I don't do well with the noble dens. I lose interest in them pretty fast once the leaves drop. Here is a link with some very nice information about them. I did intend to actually adore these once. :|

I just don't like how they look without the leaves. Ugh! At least aggregatum and kingianum keep their leaves.

Has it been losing leaves from fully grown canes?

I grow other dendrobiums that need the same conditions--plenty of water in summer, either much less or none in winter. The basket pot and lava rock combination is absolutely perfect for them. You can water them like mad and the roots never rot.

I often find that if I don't change my watering/temps/light for the plant then they won't go dormant.
A keiki in it's first year on it's own should perhaps not be allowed to go dormant. I was advised with some of mine to keep growing them as normal the first winter, maybe just reducing watering as you find that they dry out slower because it's cooler, but otherwise keep the same.
The advice I've then been following this year is to stop fertiliser in August, then drastically reduce watering (to almost nothing) from Halloween to Valentines.
Last year I fertilised too late and stopped at the same time as I stopped watering and they kept on growing right through until January before they had a slight rest.
Basically when they go dormant they will stop growing, the new canes will terminate and they may loose leaves, but not always.
