I will leave the Dendrobium to others but for the Cym, you should cut the bottom half off the Cym. roots so that they will not touch the bottom of the new pot. You should fit the pot diameter to the bulbs, NOT THE DEPTH TO THE ROOTS! If you leave all those roots on the division, most of them broken, they will only rot and the pot will be way too big for the plant. Shorten them and they will branch into the new media and grow vigorously!
Select a pot with about 2" of space around the division which you put in the middle of the pot. I never pot bigger than 1-gallon or 2-gallon unless I have HUGE Standard plant bulbs to fit into a 3-gallon.
I bury the bulbs about 1/3 of their length as that is the area from which the new growths emerge. It also precludes them from wiggling in the pot while they are getting established. Once they start growing new bulbs, these will establish their own level.
