Default Dendrobium growing roots on cane?

Hi everyone! I've been trying to get an orchid to survive past its flowering stage for years and I have never succeeded until now! I purchased a dendrobium from Lowe's a couple months back (no other information other than the tag that said "Dendrobium") and the flowers have all since fallen off. I now have what looks like a new spike growing from the cane but also a ton of roots. I'm not sure if I should cut the cane or just leave it as is? I'll post pictures once I reach my five postings. Any tips or ideas? Is this normal?

So reading through the forum more I think its actually a keikis? I'm not actually quite sure what that is but it sounds like a good thing. LOL!

A keiki is a baby orchid. If all goes well you can end up with a second (or more) plant(s) that will look like the mother plant.

What do I do next? I've read that I could cut it off to start a new plant but will that hurt the mother plant?

It does sound like a keiki and usually you let it grow as is until it has at least 3 inches of root. Then you can usually just twist it off and it can be potted up. Don't cut the old canes down as they produce and support the new growth that will come from the bottom.

It doesn't hurt to let it grow for a while and get larger and stronger before removing it.

Here is what it's looking like. I actually removed all the old medium after the flowers fell off and re-potted it. I'm not sure what the condition is on the canes. They seem relatively healthy. I'll post a more complete picture of the plant later. Am I ready to remove the kikei?

Your canes and keiki look fine. It looks large and well rooted enough that it could come off. You could also carefully slice between it and the cane to remove it.
