Sweet! Two of mine are rescues, and I haven't seen the flowers of one of them (it belonged to a co-worker before I ever got it), so I can't wait for them all to get healthy and bloom like that!

That temp should be fine, even for phals. I grow my phals mid 60s day and night in the winter no problem. Apparently lower temps mean it is less fussy about humidity too.

Bloom time varies but I've had one in bloom 5months now and a secondary spike about to open. I am hoping for 7-8 months on this one now, after which I will chop spent spikes and give it a well earned rest!

Normal bloom time is 3-4 months. One of my phal's has kept its full bloom for 5 months now, it's a Harlequin. I've never experienced this but some folks from our local orchid society have had their phals bloom for 6 months!!

If the orchid that has flowers has blasted, if I cut the spikes at the second node or so, is there a chance it will send out more flowers later this summer?

It may or may not.

It depends on the plant.
