Humidity trays actually don't do a whole lot for raising humidity levels, unless the plants are in an enclosed space (with fans running of course). Certainly not as effective as a humidifier.
I have trays under some of my plants on shelves, and the humidity meter shows only a 5-7% increase with the trays. Hybrid Phals are quite tolerant of low humidity though.
