OK I don't think it has a registered name I'm afraid which makes it harder to search for pictures, looking for pictures of it's parents may give you some guess as to what it should look like.

Sophronitis Starry Sky
First the two Rhynchosophrocattleya were crossed with each other and then the Sophronitis Starry Sky was crossed with the result. That's shown by the x between parts of the name and the brackets.
Rhynchosophrocattleya (Mem Helen Brown x Sunset Bay) shows those two were crossed with each other. Rhynchosophrocattleya could be in front of both names, but because they are both in that genus it's shortened by moving it outside the brackets. Then the Sophonitis follows that after an x, showing it was crossed with what proceeds it.
I've searched the RHS register and as far as I can tell the Mem Helen Brown x Sunset Bay cross has not been given a name of it's own, that being the case, the whole cross including the Sophonitis can't have been given it's own name either. That's why such a long name is listed giving the parents. If the cross of those parents ever is registered you will be able to apply the name to your plant.
