Oh and for the time being should I water twice a week because I never soaked the chips ??

I am happy to say that the flowers are still doing fine and they seem like they won't fall off

Good to hear. If the pot seems dry, then water twice a week. But make sure it is getting dry or close to it in the center.

I water with about 3 gallons and let it soak through is that enough or should I run the tap for 3 mins

That sounds like more than enough water.

If you have any bamboo skewers (the kind you BBQ with) or a bamboo chop stick, you can stick it into down into the bark in the center of the pot.
As long as it feels damp and cool when you pull it out, you don't need to water. When it feels like it is drying out, it's time to water.
Phalaenopsis don't like to be completely dry.

In my experience, Phalaenopsis don't like to be kept too wet after repotting. Damp not soaking wet is best until the roots get aclimated.

I agree with nutgirl. That's more than enough and I like the kebab skewer method as well.
