I use lava rock and net pots because it is really the easiest for me. The exact answer about how often you water varies as it depends upon many conditions: humidity, amount of healthy roots, size of plant, size/type of pot, size/type of medium, amount of light (cloudy or sunny weather affect watering), temperatures, airflow, and whether the plant is growing/blooming. The skewer method someone suggested is a good plan for bark and moss because it will tell you if the middle has dried out. You can use anything wooden that is on hand.
