Lisa - what you have are 2 Phalaenopsis plants. When they are done flowering it is normal for the spike to turn brown and die, when it does, cut it off close to the plant. From what I can see (your photos are blurry) your plants appear to be doing ok. They want to be watered so that water is flowing out of the bottom of the pot and then again as they are approaching just slightly damp. They don't want to ever go completely bone dry.
