White roots are not a sign of virus! Orchid roots in opaque pots will never be green since they aren't exposed to light. Even green roots will be whitish when their dry. The root color doesn't matter so much as long as the roots are nice and firm to the touch. (not squishy or hollow).
As for viruses, you're right, it can be hard to know if a plant is infected. Some plants will remain completely symptomless and still be infected. Other plants will be full of suspicious markings, but will turn out to be virus free. Basically virus tests are the only way to be almost certain about the viral status of a plant.
