Yeah, I'd remove the moss now and do a proper repot later.

I also recommend removing the dead roots too. I think you'll find that the actual living root mass will be pretty small.

So later with a proper repot, I heard I should expect old roots to die and new ones to establish. Should I go back in and cut off old roots or just let them stay? I'd assume this would be months after a repot.

I recommend cutting only the dead ones.

I've successfully pulled out a potfull of all old moss with a pair of tweezers, then tucked new medium down around the good roots with a chop stick. Held the plant until I was ready to repot at the right time.
